Motivational Leafy Greens

You may get down on yourself from time to time because you have a total failure with some particular crop. Sometimes you plant something and it just doesn’t work or some evil little creature comes along and chews it up. When that happens I cheer myself up by looking to something I planted that produced a huge yeild. It reminds me that I am both competent and that the forces of nature are not conspireing against me.

This year it is arugula and swiss chard, among other things. My little four rows of leafy greens have gone crazy – especially the arugula. I’m cutting from this bed as often as I can but it doesn’t seem to make a dent.

All I can say is, thank God someone thought up arugula pesto because that only way I can think to deal with all these leaves is to make some.

    My swiss chard is doing amazing this year too! It must be the year for chard? What is your favorite way to eat it?

      I’m a little crazy when it comes to leafy greens. I can just shove them in my mouth and chew on them like a cow chews on hay. Sometimes I just can’t be bothered to prepare anything fancy in the morning and I just eat it as a side with whatever else I’m having for breakfast.

      But my favorite way to eat them is in a salad with any number of combinations of onions, tomatos, avacado, artichoke, chicken, et cetera.
