Arugula pesto is not as well known and not as appreciated as regular basil pesto but I think it’s just as good. It has a less sweet flavour, but that just makes it a nice variation on the pesto you are familiar with.
It is also a great way to process any extra arugula you grow. All you have to do it throw together some arugula, garlic, parmesan cheese, pine nuts, olive oil and a bit of lemon juice. I not going to bother posting a recipe because I’ve learned everyone has their own version and even if you follow an exact list of proportions, you may still end up tasteing it and amending it as you prefer.
I ate some last night with dinner and woke up this morning with a garlic hangover! The lingering flavour on my tounge was the first sensation I can remember having as I emerged from my dreams.
